Harvesting olives
Last week we harvested our olives.The fruit was ripe and ready to be collected.We follow the old way of collecting the olives by first placing a big net under the tree,saw off the branches that need to be cut and then remove the fruit by beating them with a stick. The olives fall onto the net and then placed in sacks.This method is benefits any future production of the tree.φωτο 4,5,6,7,8.
The sooner the olives go the oil press to extract the oil,the better the quality.This year we had a big production and once again, the oil was very fine with an emerald color that will last for about two to three months and then will turn to golden green.
As we also have some roots of the Kalamata eatable variety,( big and dark colored olives) we take care not to damage the fruit.Those are picked by hand and placed in baskets.
